6 slices of artisanal sourdough bread

4 tablespoons unsalted butter, softened

1 cup shredded sharp cheddar cheese

1 cup shredded mozzarella cheese

1 large heirloom tomato, sliced

1 teaspoon dried oregano

1 teaspoon garlic powder

Salt and freshly ground black pepper to taste

Fresh basil leaves for garnish (optional)

Prepare the Slices: Lay out the sourdough bread slices on a clean surface. Butter one side of each slice generously with softened butter.

    Assemble the Sandwich: On the unbuttered side of three bread slices, layer half of the cheddar cheese evenly. Top with a layer of tomato slices, seasoning them with salt, pepper, and half of the dried oregano. Sprinkle half of the mozzarella cheese on top of the tomatoes.

      Add More Layers: Place another slice of bread, buttered side up, on top of each assembled sandwich. Press lightly to secure the layers. Repeat the layering process with the remaining cheese and tomato slices, seasoning as you go, finishing with a layer of cheddar and mozzarella cheese atop the last slice of bread.

        Grill the Sandwich: Heat a non-stick skillet over medium heat. Carefully transfer the assembled sandwiches into the skillet (you may need to do this in batches). Grill until the bottom slices are golden brown, approximately 3-4 minutes.

          Flip and Cook: Gently flip the sandwiches over using a spatula. Press down slightly to ensure even grilling. Cook for another 3-4 minutes until the other side is golden and the cheese is melted. Reduce the heat if the bread browns too quickly.

            Serve: Once grilled to perfection, remove from the skillet and allow to cool for a minute. Cut the sandwiches diagonally into halves or quarters.

              Garnish: Top with fresh basil leaves for an extra touch of flavor and color if desired.
