Ingredients

12 oz tortellini (cheese or spinach-filled)

1 lb thinly sliced beef steak (ribeye or sirloin works well)

1 medium onion, sliced

1 green bell pepper, sliced

2 tablespoons olive oil

3 cloves garlic, minced

1 cup heavy cream

1 cup provolone cheese, shredded

½ cup beef broth

Salt and pepper to taste

Fresh parsley, chopped (for garnish)

Instructions

Cook the Tortellini: In a large pot of salted boiling water, cook the tortellini according to package instructions until al dente. Drain and set aside.

Sauté Vegetables: In a large skillet, heat olive oil over medium-high heat. Add sliced onions and bell peppers, cooking until they are softened and slightly caramelized, about 5-7 minutes. Stir in the minced garlic and cook for an additional minute until fragrant.

Cook the Beef: Push the vegetables to the side of the skillet. Add the sliced beef to the skillet, seasoning with salt and pepper. Cook until the beef is browned and cooked through, about 3-5 minutes. Mix the beef and vegetables together.

Prepare the Sauce: Lower the heat to medium. Pour in the beef broth and heavy cream, stirring to combine. Bring the mixture to a simmer.

Add Cheese: Once simmering, add the shredded provolone cheese to the skillet, stirring continuously until the cheese melts and the sauce becomes creamy.

Combine Tortellini: Gently fold in the cooked tortellini, allowing it to absorb some of the creamy sauce. Heat for an additional minute to warm everything through.

Adjust Seasoning: Taste and adjust seasoning with more salt and pepper if needed.

Serve: Spoon the cheesesteak tortellini into bowls and garnish with chopped parsley for a pop of color and freshness.

                    - Presentation Tips: Serve in shallow bowls, and consider topping with extra shredded provolone or a sprinkle of crushed red pepper flakes for added heat.
