2 ribeye steaks (about 1 inch thick)

2 tablespoons olive oil

1 large onion, thinly sliced

1 teaspoon sugar

1 tablespoon balsamic vinegar

1 teaspoon fresh thyme leaves (or ½ teaspoon dried thyme)

4 medium-sized russet potatoes, cut into fries

2 tablespoons cornstarch

Vegetable oil for frying

Prepare the Fries: Soak the cut potatoes in cold water for at least 30 minutes to remove excess starch. Drain and pat dry with paper towels.

    Fry the Potatoes: Heat vegetable oil in a deep pot or fryer to 350°F (175°C). Toss the dried potatoes with cornstarch until coated. Fry in batches for about 5-6 minutes until golden and crispy. Remove with a slotted spoon and drain on paper towels. Season with salt.

      Caramelize the Onions: In a skillet, heat 1 tablespoon of olive oil over medium heat. Add the sliced onions and a pinch of salt, cooking gently until they turn soft (about 15 minutes). Stir in sugar, balsamic vinegar, and thyme, then continue cooking for an additional 10-15 minutes until the onions are deeply caramelized. Remove from heat and set aside.

        Cook the Steak: Season each ribeye steak generously with salt and pepper on both sides. In the same skillet used for the onions, heat the remaining olive oil over medium-high heat. Add the ribeye steaks to the skillet and cook for 4-5 minutes on each side for medium-rare, or until desired doneness.
