12 ounces rigatoni pasta

1 cup pumpkin puree (canned or fresh)

1 cup grated Gruyere cheese

1/2 cup heavy cream

2 tablespoons olive oil

1 small onion, finely chopped

2 cloves garlic, minced

1 teaspoon fresh sage, chopped (or 1/2 teaspoon dried)

1/2 teaspoon nutmeg

Salt and pepper to taste

1/4 cup breadcrumbs (optional for crunch)

Fresh parsley, chopped for garnish

Cook the Pasta: In a large pot of salted boiling water, cook the rigatoni according to package instructions until al dente. Drain and set aside, reserving 1/2 cup of pasta water.
