Ingredients

1 cup graham cracker crumbs

4 tablespoons unsalted butter, melted

2 ripe bananas, sliced

1 cup cold milk

1 package (3.4 oz) instant vanilla pudding mix

1 cup whipped topping (or homemade whipped cream)

1 teaspoon vanilla extract

Additional banana slices and whipped topping for garnish

Chocolate shavings or caramel sauce (optional)

Instructions

In a mixing bowl, combine the graham cracker crumbs and melted butter until well combined. Press the mixture into the bottom and sides of mini pie pans or muffin tins, creating small crusts. Chill in the refrigerator for about 10 minutes to set.

In another bowl, whisk together the cold milk and instant vanilla pudding mix for about 2 minutes or until the mixture thickens.

Fold in the whipped topping and vanilla extract gently until combined, creating a smooth and creamy filling.

Remove the crusts from the refrigerator and layer sliced bananas at the bottom of each mini pie crust.

Spoon the banana pudding mixture over the banana layer, filling each mini pie crust to the top.

Cover the pies with plastic wrap and refrigerate for at least 2 hours or until set (overnight if you prefer).

Before serving, garnish each mini pie with additional banana slices, a dollop of whipped topping, and a sprinkle of chocolate shavings or a drizzle of caramel sauce if desired.
