1 cup graham cracker crumbs

4 tablespoons unsalted butter, melted

16 oz cream cheese, softened

1/2 cup granulated sugar

2 large eggs

1 teaspoon vanilla extract

1/2 cup sour cream

1/4 cup heavy cream

2 tablespoons brown sugar (for topping)

Preheat the Oven: Preheat your oven to 325°F (160°C). Line a muffin tin with paper liners or grease well to ensure easy removal.

    Prepare the Crust: In a medium bowl, mix the graham cracker crumbs and melted butter until well combined. Press about 1 tablespoon of the mixture into the bottom of each muffin cup, pressing down firmly.

      Mix the Filling: In a large mixing bowl, beat the softened cream cheese until smooth. Add the granulated sugar and beat until combined. Then add the eggs, one at a time, mixing well after each addition. Stir in the vanilla extract, sour cream, and heavy cream until the mixture is creamy and smooth.

        Fill the Muffin Cups: Pour the cheesecake filling over the crusts in each muffin cup, filling them approximately 3/4 full.

          Bake: Place the muffin tin in the preheated oven and bake for about 20-25 minutes or until the edges are set but the centers still have a slight jiggle.

            Cool Down: Turn off the oven, crack the oven door, and allow the cheesecakes to cool in the oven for 30 minutes to prevent cracking. Once cooled, transfer them to the fridge and chill for at least 2 hours or overnight for better results.

              Brûlée the Tops: Before serving, sprinkle a thin layer of brown sugar on top of each cheesecake. Using a kitchen torch, carefully caramelize the sugar until it bubbles and turns golden brown. If you don’t have a torch, place the cheesecakes under a broiler for a minute or two, watching closely to avoid burning.

                Serve: Once the tops are caramelized and have cooled slightly, remove the cheesecakes from the muffin tin. Garnish with fresh berries if desired, and serve chilled.
