Ingredients

1 pound ground chicken

1 cup breadcrumbs (preferably Italian seasoned)

1/2 cup grated Parmesan cheese

1/4 cup fresh parsley, chopped

1 large egg

3 cloves garlic, minced

1/2 cup onion, finely chopped

1/4 cup milk

1 teaspoon dried oregano

1 teaspoon salt

1/2 teaspoon black pepper

1/2 cup marinara sauce (for topping)

1 tablespoon olive oil (for cooking onion)

Instructions

Preheat the Oven: Begin by preheating your oven to 375°F (190°C).

Sauté Onions: In a small pan, heat the olive oil over medium heat. Add the finely chopped onions and sauté until they are soft and translucent, about 4-5 minutes. Set aside to cool slightly.

Mix the Meatloaf Ingredients: In a large mixing bowl, combine the ground chicken, breadcrumbs, grated Parmesan cheese, chopped parsley, egg, minced garlic, milk, oregano, salt, and pepper. Add the sautéed onions to the mixture.

Blend Well: Using your hands or a spatula, mix until all ingredients are well incorporated but avoid overmixing, as this can make the meatloaf dense.

Shape the Meatloaf: Transfer the meat mixture onto a baking sheet lined with parchment paper. Gently shape it into a loaf form about 1 1/2 inches thick.

Top with Marinara Sauce: Evenly spread the marinara sauce over the top of the meatloaf for added moisture and flavor.

Bake: Place the meatloaf in the preheated oven and bake for 45-50 minutes, or until cooked through and the internal temperature reaches 165°F (74°C).

Rest and Slice: Once done, allow the meatloaf to rest for about 10 minutes before slicing. This helps retain its juices.

Serve: Slice into hearty pieces and serve warm, either on its own or with a side of mashed potatoes or a fresh garden salad.

                    Prep Time: 15 minutes | Total Time: 1 hour 5 minutes | Servings: 4-6

                      - Presentation Tips: Place the meatloaf slices on a platter and drizzle with additional marinara sauce. Garnish with fresh parsley sprigs for a pop of color.
