8 oz cream cheese, softened

1/2 cup powdered sugar

1 cup white chocolate chips, melted

1/2 cup fresh raspberries, mashed

1 teaspoon vanilla extract

1 cup graham cracker crumbs

1/2 cup white chocolate chips (for coating)

A pinch of sea salt

Optional: Extra raspberries for garnish

Mix the Cream Cheese: In a mixing bowl, beat the softened cream cheese until smooth and creamy.

    Add Sweetness and Flavor: Gradually mix in the powdered sugar and vanilla extract until well combined and no lumps remain.

      Incorporate Raspberries: Gently fold in the mashed raspberries with a spatula, ensuring not to break them down too much.

        Add White Chocolate: Pour in 1 cup of melted white chocolate, mixing until the mixture is evenly combined. You may need to let the white chocolate cool slightly before adding it to prevent curdling the cream cheese.

          Chill the Mixture: Cover the bowl with plastic wrap and place it in the fridge for about 1 hour, or until it's firm enough to handle.

            Form the Balls: Once chilled, use a tablespoon to scoop out portions of the mixture and roll them into balls, about 1 inch in diameter. Roll the balls in graham cracker crumbs until fully coated.

              Chocolate Coating: Melt the remaining 1/2 cup of white chocolate chips in a microwave-safe bowl in 30-second increments, stirring between each, until smooth.

                Dip the Balls: Dip each cheesecake ball into the melted white chocolate and use a fork to lift them out, allowing excess chocolate to drip off.

                  Set and Chill Again: Place the coated balls on a parchment-lined baking sheet. If desired, sprinkle a pinch of sea salt on top. Refrigerate for about 30 minutes to let them set.

                    Garnish and Serve: Once set, you can optionally garnish with whole raspberries. Serve chilled and enjoy your delightful treats!
