Ingredients
  

2 pounds oxtails

1 tablespoon vegetable oil

1 large onion, diced

3 cloves garlic, minced

2 medium carrots, sliced

2 stalks celery, chopped

1 potato, diced

1 teaspoon dried thyme

1 teaspoon dried rosemary

1 bay leaf

6 cups beef broth

1 tablespoon soy sauce

1 tablespoon tomato paste

Salt and pepper, to taste

Fresh parsley, chopped (for garnish)

Instructions
 

Sear the Oxtails: Set the Instant Pot to Sauté mode. Add the vegetable oil. Once hot, season the oxtails with salt and pepper, then sear them in batches until browned on all sides (about 4-5 minutes per batch). Remove and set aside.

    Sauté Vegetables: In the same pot, add the diced onion, minced garlic, sliced carrots, and chopped celery. Sauté for 3-4 minutes until the vegetables are slightly softened.

      Add Remaining Ingredients: Stir in the diced potato, dried thyme, dried rosemary, bay leaf, beef broth, soy sauce, and tomato paste. Mix well to combine.

        Pressure Cook: Return the oxtails to the pot. Close the lid securely and set the valve to Sealing. Select Pressure Cook (high pressure) and set the timer for 45 minutes.

          Natural Release: Once cooking is complete, allow for a natural release for 15 minutes, then carefully switch the valve to Venting to release any remaining pressure.

            Serve: Open the pot, remove the bay leaf, and give the soup a stir. Taste and adjust seasoning with salt and pepper as needed. Serve hot, garnished with chopped fresh parsley.
