1 lb chicken breasts, boneless and skinless

1/3 cup honey

2 tablespoons chipotle peppers in adobo sauce, finely chopped

2 tablespoons olive oil

2 garlic cloves, minced

1 teaspoon smoked paprika

1 teaspoon ground cumin

Salt and pepper to taste

2 cups cooked rice (white, brown, or jasmine)

1 cup corn (fresh, frozen, or canned)

1 avocado, sliced

1 cup black beans, rinsed and drained

1/2 cup cherry tomatoes, halved

1/4 cup chopped fresh cilantro

Lime wedges (for serving)

Optional: Sour cream or Greek yogurt for topping

Instructions
 

Marinate the Chicken:

    In a bowl, whisk together honey, chipotle peppers, olive oil, garlic, smoked paprika, cumin, salt, and pepper. Add the chicken breasts and coat evenly. Cover and marinate for at least 30 minutes in the refrigerator.

      Cook the Chicken:

        Heat a grill pan or skillet over medium heat. Remove the chicken from the marinade, letting excess drip off. Cook the chicken for about 5-7 minutes on each side, or until fully cooked and internal temperature reaches 165°F (75°C). Let it rest for a few minutes before slicing.
