Ingredients

1 cup creamy peanut butter

2 cups powdered sugar

1 teaspoon vanilla extract

1/2 teaspoon salt

2 cups semisweet chocolate chips

1 tablespoon coconut oil (optional, for smoothing chocolate)

A pinch of sea salt for garnish (optional)

Instructions

Make the Peanut Butter Filling:

    - In a large mixing bowl, combine the creamy peanut butter, powdered sugar, vanilla extract, and salt. Mix with a spatula until the mixture is smooth and well combined. If it's too crumbly, adjust with a little more peanut butter.

      Shape the Eggs:

        - Using your hands, scoop out a tablespoon of the peanut butter mixture. Roll it into an egg shape, about 2 to 3 inches long. Place shaped eggs on a parchment-lined baking sheet. Repeat until all the peanut butter mixture is used up. Chill the shaped eggs in the refrigerator for about 30 minutes to firm up.

          Melt the Chocolate:

            - In a microwave-safe bowl, combine the semisweet chocolate chips and coconut oil (if using). Microwave in 30-second intervals, stirring between each interval until completely melted and smooth.

              Coat the Eggs:

                - Take the chilled peanut butter eggs out of the refrigerator. Using a fork, dip each egg into the melted chocolate, ensuring it's fully coated. Allow excess chocolate to drip off, and then return it to the parchment-lined sheet.

                  Garnish and Chill:

                    - If desired, sprinkle a pinch of sea salt on top of each chocolate-coated egg before the chocolate sets. Once all eggs are coated, place them back in the refrigerator for at least 30 minutes to let the chocolate harden.

                      Serve and Enjoy:

                        - Once chocolate has fully set, your homemade Reese’s Eggs are ready to be enjoyed! Store any leftovers in an airtight container in the refrigerator.
