Ingredients

2 tablespoons olive oil

1 medium onion, diced

3 cloves garlic, minced

1 bell pepper (red or yellow), diced

2 medium carrots, diced

2 cups cooked chicken, shredded

1 can (15 oz) black beans, drained and rinsed

1 can (15 oz) diced tomatoes with green chilies

4 cups chicken broth

1 cup corn (fresh or frozen)

1 teaspoon ground cumin

1 teaspoon smoked paprika

1 teaspoon chili powder

½ cup heavy cream or coconut cream

1 lime, juiced

Salt and pepper to taste

Tortilla chips, for topping

Fresh cilantro, for garnish

Avocado slices, for garnish

Instructions

Heat the Oil: In a large pot, heat the olive oil over medium heat. Add the diced onion and sauté until translucent, about 5 minutes.

Add Vegetables: Incorporate the minced garlic, bell pepper, and carrots. Sauté for another 3-4 minutes until vegetables soften.

Mix in Chicken and Beans: Stir in the shredded chicken, black beans, diced tomatoes, corn, cumin, smoked paprika, and chili powder. Cook for 2 minutes to combine the flavors.

Pour in Broth: Add the chicken broth to the pot, stirring well. Bring the mixture to a boil, then reduce the heat and let it simmer for 20-25 minutes.

Create Creaminess: After simmering, stir in the heavy cream (or coconut cream) and lime juice. Allow the soup to heat through for an additional 5 minutes. Season with salt and pepper to taste.

Adjust Consistency: If the soup is too thick, add additional broth or water to reach your desired consistency.

Serve: Ladle the soup into bowls, topping it with crushed tortilla chips, fresh cilantro, and avocado slices for garnish.
