Ingredients

4 salmon fillets (about 6 oz each)

1 can (13.5 oz) coconut milk

2 tablespoons red curry paste

3 cloves garlic, minced

1 tablespoon fresh ginger, grated

1 tablespoon fish sauce (or soy sauce for a vegetarian option)

1 tablespoon lime juice

1 red bell pepper, sliced

1 cup spinach, fresh

2 tablespoons olive oil

Salt and pepper to taste

Fresh cilantro for garnish

Instructions

Prepare the Garlic Butter: In a small bowl, mix together 2 tablespoons of softened butter, 1 clove of minced garlic, and a pinch of salt. Set aside to let the flavors meld.

Sear the Salmon: Heat 2 tablespoons of olive oil in a large skillet over medium-high heat. Season the salmon fillets with salt and pepper. Once the oil is hot, add the salmon fillets skin-side down and sear for about 4-5 minutes until the skin is crispy.

Make the Coconut Curry Sauce: Flip the salmon fillets and reduce the heat to medium. Add the remaining minced garlic and the grated ginger to the skillet. Cook for about 1 minute until fragrant. Next, pour in the coconut milk and stir in the red curry paste, fish sauce, and lime juice. Mix until the curry paste is fully dissolved into the sauce.

Add Vegetables: Add the sliced red bell pepper and fresh spinach to the skillet. Cook for an additional 5-7 minutes on medium-low, allowing the vegetables to soften and the salmon to cook through. The salmon should flake easily with a fork and the sauce should gently bubble.

Finish with Garlic Butter: Once the salmon is cooked, take the skillet off the heat and dollop the prepared garlic butter over the salmon fillets. Let it melt into the sauce for a minute.

Serve: Carefully plate the salmon fillets with a generous amount of curry sauce and vegetables from the pan on top. Garnish with fresh cilantro.
