1 can (15 oz) chickpeas, drained and rinsed

2 tablespoons olive oil

1 teaspoon paprika

1 teaspoon ground cumin

1/2 teaspoon garlic powder

1/2 teaspoon onion powder

1/4 teaspoon cayenne pepper (adjust for heat preference)

Salt and freshly ground black pepper, to taste

Zest of 1 lemon

Juice of 1/2 lemon

Fresh parsley, chopped (for garnish)

Instructions
 

Preheat the Oven: Preheat your oven to 400°F (200°C).

    Prepare the Chickpeas: After draining and rinsing the chickpeas, pat them dry with paper towels. This will help them become crispy in the oven.

      Season the Chickpeas: In a large bowl, combine the chickpeas, olive oil, paprika, ground cumin, garlic powder, onion powder, cayenne pepper, salt, pepper, and lemon zest. Toss well to ensure that the chickpeas are evenly coated with the oil and spices.

        Roast the Chickpeas: Spread the seasoned chickpeas in a single layer on a baking sheet lined with parchment paper. Bake in the preheated oven for 25-30 minutes, stirring halfway through, or until they are golden brown and crispy.

          Add Lemon Juice: Once roasted, remove the chickpeas from the oven and immediately drizzle with lemon juice. Toss again for a zesty kick.
