Ingredients

2 large chicken breasts, cooked and shredded

1 cup ricotta cheese

1 cup mozzarella cheese, shredded

1/2 cup grated Parmesan cheese

2 cups fresh spinach, chopped

1 tablespoon garlic, minced

1 teaspoon Italian seasoning

1 package of crescent roll dough (8 oz)

1/2 teaspoon salt

1/4 teaspoon black pepper

1 egg, beaten (for egg wash)

1 cup marinara sauce (for serving)

Fresh basil leaves for garnish

Instructions

Preheat your oven to 375°F (190°C) and line a baking sheet with parchment paper.

In a large mixing bowl, combine the shredded chicken, ricotta cheese, mozzarella cheese, grated Parmesan, chopped spinach, minced garlic, Italian seasoning, salt, and pepper. Mix until well combined.

Open the crescent roll dough and separate the triangles along the perforations.

For each triangle, place about 2 tablespoons of the chicken and cheese mixture at the wider end.

Fold the dough over the filling and carefully pinch the edges to seal it tightly, forming a pillow shape. Make sure there are no openings.

Place each sealed pillow on the prepared baking sheet, spacing them a little apart.

Brush the tops of the pillows with the beaten egg for a golden finish.

Bake in the preheated oven for about 15-18 minutes, or until the pillows are puffed and golden brown.

While the pillows bake, warm up the marinara sauce in a small saucepan over low heat.

Once baked, remove the chicken Parmesan pillows from the oven and let them cool slightly before serving.

Serve the pillows drizzled with warm marinara sauce and garnish with fresh basil leaves.
