1 pound boneless, skinless chicken breasts

6 cups low-sodium chicken broth

2 cups egg noodles

1 medium onion, diced

2 cloves garlic, minced

3 carrots, sliced

2 celery stalks, sliced

1 teaspoon fresh thyme (or ½ teaspoon dried thyme)

1 bay leaf

2 tablespoons olive oil

Salt and pepper to taste

2 cups baby spinach

Instructions
 

In a large pot, heat the olive oil over medium heat. Add the diced onions and sauté for about 3-4 minutes, until they become translucent.

    Stir in the minced garlic, sliced carrots, and celery. Cook for another 5 minutes, stirring occasionally, until vegetables are just tender.

      Add the chicken breasts to the pot along with the chicken broth, thyme, bay leaf, and seasoning (salt and pepper). Bring the mixture to a boil.

        Once boiling, reduce the heat to a simmer and cover the pot. Cook for 15-20 minutes, or until the chicken is fully cooked (internal temperature should reach 165°F).

          Carefully remove the chicken breasts from the pot and shred them using two forks. Return the shredded chicken to the pot.

            Add the egg noodles to the soup and cook according to the package instructions, generally about 6-8 minutes.

              In the last minute of cooking, stir in the baby spinach until wilted.

                Taste and adjust seasoning as needed before serving. Remove the bay leaf before serving.
