Ingredients
  

8 ounces rotini pasta

6 slices bacon, chopped

1 cup cherry tomatoes, halved

1 cup romaine lettuce, chopped

1/2 cup mayonnaise

1 tablespoon apple cider vinegar

1 tablespoon Dijon mustard

1 teaspoon garlic powder

Salt and pepper to taste

1/4 cup green onions, sliced

1/4 cup shredded cheddar cheese

Instructions
 

Cook the Pasta: In a large pot, bring salted water to a boil. Add the rotini pasta and cook according to package instructions until al dente. Drain and rinse under cold water to cool. Set aside.

    Cook the Bacon: In a skillet over medium heat, add the chopped bacon. Cook until crispy, about 6-8 minutes. Remove bacon from the skillet and drain on paper towels.

      Make the Dressing: In a medium bowl, whisk together the mayonnaise, apple cider vinegar, Dijon mustard, garlic powder, salt, and pepper until smooth and well combined.

        Combine Ingredients: In a large serving bowl, add the cooled pasta, halved cherry tomatoes, chopped romaine lettuce, cooked bacon, and sliced green onions. Pour the creamy dressing over the salad and toss gently to combine.

          Add Cheese: Sprinkle the shredded cheddar cheese over the top of the pasta salad. Gently fold it in for an added creamy texture.

            Chill and Serve: Cover the salad and refrigerate for at least 30 minutes to allow the flavors to meld. Serve chilled or at room temperature.
