1 package of mini puff pastry sheets (about 12 sheets)

1 cup marinara sauce

1 ½ cups shredded mozzarella cheese

1 cup sliced pepperoni

1 teaspoon Italian seasoning

1/2 teaspoon garlic powder

Olive oil for brushing

Fresh basil leaves, for garnish (optional)

Grated parmesan cheese for serving (optional)

Instructions
 

Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper.

    Roll out the mini puff pastry sheets on a lightly floured surface to slightly flatten them. Cut them into 3-inch circles.

      Place the pastry circles onto the prepared baking sheet.

        Spoon about 1 teaspoon of marinara sauce onto the center of each pastry circle, spreading it slightly but avoiding the edges.

          Sprinkle a generous amount of shredded mozzarella cheese over the marinara.

            Layer 2-3 slices of pepperoni on top of the cheese.

              In a small bowl, mix the Italian seasoning and garlic powder, and sprinkle a pinch of this mixture over the toppings on each mini pizza.

                Gently fold the edges of the pastry circles toward the center, pinching them to secure the filling. You can leave the center open for that classic pizza look.

                  Brush the tops of the pastry with a little olive oil for a golden finish.

                    Bake in the preheated oven for 15-20 minutes, or until the pastry is puffed and golden brown.

                      Remove from the oven and let cool slightly.

                        Serve warm, garnished with fresh basil leaves and a sprinkle of grated parmesan cheese if desired.
