Zucchini Lasagna with Ground Turkey

3 medium zucchinis

1 pound ground turkey

1 small onion, finely chopped

2 cloves garlic, minced

1 can (15 oz) crushed tomatoes

1 tablespoon tomato paste

1 teaspoon dried oregano

1 teaspoon dried basil

1 teaspoon red pepper flakes (optional)

Salt and pepper to taste

2 cups ricotta cheese

1 cup shredded mozzarella cheese

1/2 cup grated Parmesan cheese

1 egg

Fresh basil leaves for garnish

Instructions
 

Prep the Zucchini:

    Slice the zucchinis lengthwise into 1/4-inch thick strips. Sprinkle with salt, place in a colander, and let them sit for about 30 minutes to draw out excess moisture.

      Cook the Turkey Filling:

        In a large skillet, heat a tablespoon of olive oil over medium heat. Add chopped onion and cook until translucent, about 3-4 minutes. Stir in garlic and sauté for an additional minute.

          Add the ground turkey, breaking it up as it cooks. Season with salt, pepper, oregano, basil, and red pepper flakes. Cook until the turkey is browned and cooked through, about 6-8 minutes.

            Stir in crushed tomatoes and tomato paste. Reduce heat to low and let it simmer while you prepare the cheese mixture.

              Make the Cheese Mixture:

                In a mixing bowl, combine ricotta cheese, Parmesan cheese, egg, a pinch of salt, and pepper. Mix until well combined.

                  Assemble the Lasagna:

                    Preheat your oven to 375°F (190°C).

                      Pat the zucchini strips dry with paper towels. In a 9x13 inch baking dish, create layers:

                        - Start with a layer of the turkey mixture at the bottom.

                          - Place a layer of zucchini strips over the turkey.

                            - Spread a layer of the ricotta mixture on top of the zucchini.

                              - Sprinkle a layer of mozzarella cheese.

                                Repeat the layers until all ingredients are used, finishing with mozzarella on top.

                                  Bake the Lasagna:

                                    Cover the dish with aluminum foil and bake for 25 minutes. Remove the foil and bake for an additional 15-20 minutes, until the cheese is bubbly and golden.

                                      Serve:

                                        Let the lasagna sit for about 10 minutes before slicing. Garnish with fresh basil leaves and serve hot.
