Instructions
Preheat your oven to 350°F (175°C) and grease a 9x5-inch loaf pan or line it with parchment paper.
In a medium bowl, whisk together the flour, baking powder, baking soda, and salt. Set aside.
In a large mixing bowl, cream together the softened butter and granulated sugar until light and fluffy.
Add the eggs one at a time, mixing well after each addition. Incorporate the vanilla extract and combine.
Mix in the Greek yogurt, lemon zest, and lemon juice until everything is well combined.
Gradually add the dry ingredients to the wet mixture, stirring until just combined.
Pour the batter into the prepared loaf pan, smoothing the top with a spatula.
Bake for 50-60 minutes or until a toothpick inserted into the center comes out clean.
While the loaf is baking, prepare the glaze by whisking together the powdered sugar, lemon juice, and lemon zest until smooth.
Once the loaf is done, remove it from the oven and let it cool in the pan for 10 minutes before transferring it to a wire rack.
Drizzle the glaze over the warm loaf, allowing it to soak in for extra moisture and flavor.
Notes
Slice the loaf and arrange on a wooden board. Garnish with thin lemon slices and fresh mint for a pop of color.
