2 cups watermelon, cubed and seedless

1 tablespoon matcha green tea powder

1 tablespoon honey (or agave syrup for vegan option)

1 cup coconut water

Juice of 1 lime

Fresh mint leaves for garnish

Start by blending the cubed watermelon in a blender until smooth. If you prefer a smoother texture, you may strain it through a fine-mesh sieve to remove the pulp.

    In a small bowl, whisk together the matcha powder with a few tablespoons of warm water (not boiling) until it forms a smooth paste.

      In a pitcher, combine the watermelon juice, coconut water, lime juice, and honey. Stir well until the honey is fully dissolved.

        Gradually add the matcha paste to the pitcher, while stirring continuously to incorporate it evenly into the mixture.

          Fill glasses with ice cubes and pour the watermelon matcha mixture over the ice, leaving some space at the top.

            Garnish each glass with fresh mint leaves for an added burst of flavor and color.
