Ingredients
  

1 pack of egg roll wrappers

1 cup shredded cooked chicken (or shrimp, for seafood lovers)

1/2 cup chopped green onions

1 cup shredded cabbage

1/2 cup grated carrots

2 cloves garlic, minced

1 tablespoon fresh ginger, minced

1 tablespoon soy sauce

1 tablespoon fish sauce (optional for an extra umami kick)

1 teaspoon cayenne pepper (adjust to taste)

Salt and pepper to taste

Oil for frying

Sweet chili sauce (for dipping)

Instructions
 

Prepare the Filling: In a large bowl, combine the shredded chicken (or shrimp), chopped green onions, shredded cabbage, grated carrots, minced garlic, and ginger.

    Season: Add soy sauce, fish sauce, cayenne pepper, salt, and pepper to the mixture. Mix well until all ingredients are evenly incorporated.

      Assemble the Egg Rolls: Lay an egg roll wrapper on a flat surface with one corner facing you. Spoon about 2 tablespoons of the filling onto the center of the wrapper. Fold the corner over the filling, then fold in the sides and roll tightly to seal. Use a little water on the edges to help seal if necessary. Repeat with remaining wrappers and filling.

        Heat the Oil: In a large skillet or deep fryer, heat oil to 350°F (175°C). Make sure there's enough oil to submerge the egg rolls.

          Fry the Egg Rolls: Carefully add the egg rolls to the hot oil in batches, making sure not to overcrowd the pan. Fry for about 3-4 minutes on each side or until they are golden brown and crispy.

            Drain: Use a slotted spoon to remove the egg rolls and place them on a paper towel-lined plate to drain excess oil.

              Serve: Serve hot with sweet chili sauce on the side for dipping.
