1.5 lbs (680g) chicken thighs, boneless and skinless, cut into bite-sized pieces

1/4 cup sugar

1/4 cup fish sauce

1/4 cup soy sauce

1/4 cup ginger, finely chopped

4 garlic cloves, minced

2 tablespoons vegetable oil

1 small onion, thinly sliced

1 red chili, sliced (optional for heat)

Fresh cilantro, for garnish

1 tablespoon lime juice

Steamed jasmine rice, for serving

Caramelize Sugar: In a large skillet, heat the sugar over medium heat. Allow it to melt, stirring gently until it turns a golden brown caramel color (about 5-7 minutes). Be careful not to burn it.

    Add Fish Sauce: Once caramelized, quickly add the fish sauce. It will bubble up, so stir vigorously until combined and smooth.

      Cook Chicken: Add the chicken pieces to the skillet, ensuring they are well-coated in the caramel sauce. Cook for about 8-10 minutes, stirring occasionally, until the chicken is browned.

        Sauté Aromatics: In a separate pan, heat vegetable oil over medium heat. Add the onion, ginger, garlic, and red chili (if using), and sauté for about 3-4 minutes until fragrant and the onion is translucent.

          Combine Ingredients: Add the sautéed aromatics to the chicken in the caramel and fish sauce mixture. Stir well to combine. Pour in the soy sauce and simmer for another 10-15 minutes, allowing the chicken to absorb all the flavors and the sauce to thicken.

            Final Touches: Just before serving, drizzle the lime juice and mix well. Taste and adjust seasoning if necessary.
