Vietnamese Cabbage and Shrimp Soup

Ingredients
  

1 lb medium shrimp, peeled and deveined

4 cups vegetable broth

2 cups cabbage, shredded (green or Napa)

1 medium onion, sliced

2 cloves garlic, minced

1-2 green chilies, sliced (adjust for spice preference)

1 tablespoon fish sauce

1 teaspoon sugar

1 tablespoon lime juice

Fresh cilantro, for garnish

Salt and pepper to taste

2 tablespoons vegetable oil

Instructions
 

Heat the vegetable oil in a large pot over medium heat. Add the sliced onion and sauté until translucent, about 3-4 minutes.

    Stir in the minced garlic and sliced green chilies, cooking for an additional 1-2 minutes until fragrant.

      Pour in the vegetable broth and bring to a gentle boil.

        Add the shredded cabbage to the pot, followed by the fish sauce and sugar. Stir well and let it simmer for about 5-7 minutes, or until the cabbage is tender.

          Add the shrimp to the pot and cook for 3-4 minutes, or until they turn pink and opaque. Avoid overcooking the shrimp to maintain their texture.

            Stir in the lime juice and season with salt and pepper to taste.

              Remove the pot from heat and let the soup sit for a couple of minutes to allow flavors to meld.

                Serve hot in bowls, garnished with fresh cilantro.
