1 cup grated zucchini

1/2 cup grated carrots

1/2 cup chopped bell peppers (mixed colors)

1/2 cup corn kernels (fresh or frozen)

1/4 cup finely chopped green onions

1/2 cup all-purpose flour (or gluten-free flour)

2 large eggs

1/2 teaspoon baking powder

1 teaspoon garlic powder

1 teaspoon cumin

Salt and pepper to taste

Olive oil for frying

Instructions
 

Begin by grating the zucchini and carrots and place them in a clean kitchen towel. Squeeze out excess moisture to prevent the fritters from being soggy.

    In a large mixing bowl, combine the squeezed zucchini, carrots, chopped bell peppers, corn, and green onions.

      In a separate small bowl, whisk together the eggs, baking powder, garlic powder, cumin, salt, and pepper until well combined.

        Pour the egg mixture over the veggie mix, and add the flour. Stir until just combined, making sure not to over-mix. The batter should be thick enough to hold together.

          Heat a generous amount of olive oil in a non-stick skillet over medium heat. Once hot, drop spoonfuls of the veggie mixture into the pan, flattening them slightly with the back of a spatula.

            Cook for about 3-4 minutes on each side until they are golden brown and crispy. Add more oil as needed between batches.

              Remove cooked fritters from the skillet and place them on a plate lined with paper towels to absorb any excess oil.

                Serve warm, garnished with a dollop of yogurt or sour cream, if desired.
