Vegetable Beef Soup

1 lb beef stew meat, cut into bite-sized pieces

2 tablespoons olive oil

1 medium onion, diced

2 cloves garlic, minced

3 carrots, sliced

2 celery stalks, sliced

1 medium potato, diced

1 can (14.5 oz) diced tomatoes with juice

4 cups beef broth

1 cup green beans, trimmed and cut into 1-inch pieces

1 teaspoon dried thyme

1 teaspoon dried basil

Salt and pepper to taste

1 bay leaf

1 cup corn kernels (fresh, frozen, or canned)

Fresh parsley, chopped for garnish

Instructions
 

In a large pot, heat the olive oil over medium-high heat. Add the beef stew meat and season with salt and pepper. Sear the meat until browned on all sides, about 5-7 minutes. Remove the beef from the pot and set aside.

    In the same pot, add the diced onion and minced garlic. Sauté for 2-3 minutes until the onion is translucent.

      Add the sliced carrots, celery, and diced potato to the pot. Stir and cook for another 5 minutes, allowing the vegetables to soften slightly.

        Return the browned beef to the pot, along with the diced tomatoes (with juice), beef broth, bay leaf, thyme, and basil. Bring the mixture to a boil.

          Once boiling, reduce the heat to low, cover, and let it simmer for about 45 minutes to 1 hour, stirring occasionally.

            After the beef has become tender and the flavors melded, add the green beans and corn, cooking for an additional 10-15 minutes until the green beans are tender.

              Adjust seasoning with additional salt and pepper as needed. Remove the bay leaf before serving.

                Serve hot, garnished with freshly chopped parsley. Enjoy your hearty soup!
