1 cup walnuts

2 cups mushrooms (button or cremini), finely chopped

1 medium onion, finely chopped

3 cloves garlic, minced

2 tablespoons soy sauce or tamari

1 tablespoon olive oil

1 teaspoon smoked paprika

1 teaspoon cumin

1 teaspoon dried oregano

Salt and pepper to taste

1 tablespoon nutritional yeast (optional)

Fresh parsley, chopped (for garnish)

Instructions
 

Prepare the Walnuts: Preheat your oven to 350°F (175°C). Spread walnuts on a baking sheet and toast for about 8-10 minutes until fragrant. Let them cool slightly and then chop finely or pulse in a food processor until they resemble coarse crumbs. Set aside.

    Sauté the Vegetables: In a large skillet, heat olive oil over medium heat. Add the chopped onions and sauté until translucent, about 5 minutes. Stir in the minced garlic and cook for another minute until fragrant.

      Cook the Mushrooms: Add the finely chopped mushrooms to the skillet. Cook until they release their moisture and reduce in size, about 7-10 minutes. Stir frequently to avoid sticking.

        Combine Ingredients: Once the mushrooms are cooked down, reduce the heat to low. Add the toasted walnuts, soy sauce, smoked paprika, cumin, oregano, salt, and pepper to the skillet. If using, sprinkle in the nutritional yeast for a cheesy flavor. Mix everything together thoroughly and let it cook for another 3-5 minutes, allowing the flavors to meld.

          Adjust Seasoning: Taste and adjust the seasoning with more salt, pepper, or soy sauce as desired.

            Serve: Remove from heat and garnish with fresh chopped parsley. This vegan walnut mushroom meat can be used in tacos, burgers, pasta sauces, or as a filling in wraps.
