For the strawberry cream filling:

1 cup fresh strawberries, diced

¼ cup coconut cream

2 tablespoons maple syrup

1 tablespoon lemon juice

1 teaspoon cornstarch

For the glaze (optional):

½ cup powdered sugar

1-2 tablespoons non-dairy milk

½ teaspoon vanilla extract

Prepare the Dough: In a small bowl, combine the lukewarm non-dairy milk and active dry yeast. Let it sit for about 5 minutes until frothy.

    In a large mixing bowl, combine the flour, coconut sugar, and salt. Make a well in the center and pour in the melted vegan butter, frothy yeast mixture, and vanilla extract. Mix until it forms a dough.

      Knead the Dough: Transfer the dough onto a floured surface and knead for about 5-7 minutes until soft and elastic. Place it in a greased bowl, cover with a kitchen towel, and let it rise in a warm place for 1 hour or until doubled in size.

        Prepare the Strawberry Cream Filling: In a mixing bowl, combine the diced strawberries, coconut cream, maple syrup, lemon juice, and cornstarch. Gently mash with a fork to create a chunky filling, but still have some pieces of strawberries intact.

          Shape the Danish: After the dough has risen, punch it down and roll it out into a rectangle about ¼ inch thick. Cut it into four squares (or more depending on desired size).

            Fill the Danish: Place a generous spoonful of the strawberry cream filling in the center of each square. Fold the corners of the square towards the center and pinch to seal, forming a Danish shape.

              Second Rise: Place the filled Danish on a lined baking sheet, cover them with a towel, and let them rise for another 30 minutes.
