Ingredients
  

1 can (15 oz) chickpeas, drained and rinsed

1/4 cup vegan mayonnaise

1 tablespoon Dijon mustard

1 tablespoon lemon juice

1/4 cup celery, finely chopped

1/4 cup red onion, finely chopped

1/4 cup dill pickles, finely chopped

1 teaspoon sriracha (adjust to taste)

1/2 teaspoon smoked paprika

1/4 teaspoon garlic powder

Salt and pepper, to taste

Whole grain bread, for serving

Lettuce leaves, for garnish

Avocado slices (optional, for added creaminess)

Instructions
 

In a medium bowl, mash the chickpeas with a fork or potato masher until slightly chunky. Don’t over-mash; you want some texture.

    Add the vegan mayonnaise, Dijon mustard, and lemon juice to the mashed chickpeas. Mix until well combined.

      Stir in the chopped celery, red onion, dill pickles, sriracha, smoked paprika, garlic powder, salt, and pepper. Adjust the spiciness and seasoning according to your preference.

        Toast the whole grain bread slices if desired.

          Assemble the sandwich by placing a generous scoop of the spicy chickpea mixture on one slice of bread. Top with lettuce leaves and avocado slices if using, then cover with another slice of bread.

            Cut the sandwich in half and serve immediately, or wrap it up for a delicious on-the-go lunch!
