Ingredients

1 cup rice paper sheets

1 teaspoon smoked paprika

1 teaspoon garlic powder

1 teaspoon onion powder

1 teaspoon salt

½ teaspoon black pepper

½ teaspoon cayenne pepper (optional, for heat)

2 tablespoons nutritional yeast

Oil for frying (coconut or vegetable oil works best)

Instructions

Prep the Rice Paper: Cut the rice paper sheets into small squares or triangular shapes, about 3-4 inches in size. You can use kitchen scissors for precision.

Create Seasoning Mix: In a small bowl, combine smoked paprika, garlic powder, onion powder, salt, black pepper, cayenne pepper (if using), and nutritional yeast. Mix well to ensure all spices are evenly distributed.

Heat the Oil: In a deep skillet or pot, heat about 2 inches of oil over medium-high heat. Use a thermometer to ensure the oil reaches around 350°F (175°C) for optimal frying.

Fry the Rice Paper: Once the oil is hot, carefully add a few pieces of the prepared rice paper to the oil. They will puff up quickly. Fry for about 5-10 seconds until they are crispy and light. Make sure not to overcrowd the pan.

Remove and Drain: Use a slotted spoon to remove the crispy rice papers from the oil and place them on a paper towel-lined plate to absorb excess oil.

Season Immediately: While the fried rice paper is still hot, sprinkle the seasoning mix generously over the top. Toss gently to coat all pieces thoroughly.

Cool and Serve: Allow the “pork rinds” to cool completely, as they will become even crunchier. Serve alongside your favorite vegan dip or snack them on their own.
