2 cans young green jackfruit in water or brine, drained and rinsed

1 medium onion, finely chopped

3 cloves garlic, minced

1 cup BBQ sauce (choose your favorite vegan brand)

1 tablespoon olive oil

1 teaspoon smoked paprika

1 teaspoon ground cumin

1 teaspoon chili powder

Salt and pepper to taste

4 whole-grain sub rolls

1 cup coleslaw mix (optional, for topping)

Fresh parsley or cilantro (for garnish, optional)

Instructions
 

Prepare the Jackfruit: After draining and rinsing the jackfruit, use your hands or a fork to shred the pieces into a meat-like texture, removing any hard core bits.

    Sauté Vegetables: In a large skillet, heat the olive oil over medium heat. Add the chopped onion and sauté until translucent, about 5 minutes. Add the minced garlic and cook for another minute until fragrant.

      Cook the Jackfruit: Add the shredded jackfruit to the skillet, along with smoked paprika, cumin, chili powder, salt, and pepper. Stir to combine and cook for about 2-3 minutes, allowing the spices to meld.

        Add BBQ Sauce: Pour in the BBQ sauce over the jackfruit mixture. Stir well to coat and reduce heat to low. Let it simmer for 10-15 minutes, until the jackfruit absorbs the flavors and becomes tender. Stir occasionally, shredding any larger pieces with your spatula.

          Prepare the Sub Rolls: While the jackfruit is simmering, toast the sub rolls in a toaster or on a grill until lightly crisp.

            Assemble the Sandwiches: Once the jackfruit has cooked and is well combined with the BBQ sauce, spoon the mixture generously onto the toasted sub rolls.

              Add Toppings: If desired, top the jackfruit with coleslaw mix for crunch, and garnish with fresh parsley or cilantro.
