For the Patty Melt:

1 pound ground beef (80/20 blend)

1 teaspoon Worcestershire sauce

Salt and pepper, to taste

4 slices of Swiss cheese

4 slices of rye or sourdough bread

1 medium onion, thinly sliced

2 tablespoons butter, softened

1 tablespoon vegetable oil

For the Secret Sauce:

1/2 cup mayonnaise

2 tablespoons ketchup

1 tablespoon Dijon mustard

1 tablespoon pickle relish

1 teaspoon garlic powder

1 teaspoon onion powder

Salt and pepper, to taste

Prepare the Secret Sauce: In a small bowl, combine the mayonnaise, ketchup, Dijon mustard, pickle relish, garlic powder, onion powder, salt, and pepper. Mix well and set aside in the refrigerator to let the flavors meld.

    Form the Patties: In a mixing bowl, combine the ground beef, Worcestershire sauce, salt, and pepper. Divide the mixture into 4 equal portions and shape them into patties, slightly larger than the bread slices since they will shrink while cooking.

      Cook the Onions: In a skillet over medium heat, add the vegetable oil. Once hot, add the thinly sliced onions and sauté until they are caramelized and golden brown, about 10-15 minutes. Stir occasionally to prevent burning. Once done, remove from the skillet and set aside.

        Cook the Patties: In the same skillet, increase the heat to medium-high. Cook the beef patties for about 3-4 minutes on one side until a nice crust forms. Flip the patties, top each with a slice of Swiss cheese, and cook for another 2-3 minutes, until the cheese is melted and the patty is cooked to your liking.

          Toast the Bread: While the patties are cooking, butter one side of each slice of bread. In a separate skillet, over medium heat, add the buttered side of the bread to the skillet. Toast until golden brown, then flip and toast the other side slightly.

            Assemble the Patty Melt: On the unbuttered side of two slices of toasted bread, spread a generous amount of the secret sauce. Place the cooked patties (with cheese) on top, then add the sautéed onions. Top with the other slices of toasted bread, buttered side up.

              Grill the Patty Melt: Return the assembled sandwiches to the skillet over medium heat. Cook each side for about 3-4 minutes or until the bread is crispy and golden brown. Press down slightly with a spatula to ensure even grilling.

                Serve: Remove from skillet, slice in half, and serve with extra secret sauce on the side for dipping.
