For the Patty:

1 lb ground beef (80/20 blend)

1 tsp garlic powder

1 tsp onion powder

Salt and pepper to taste

4 slices of Swiss cheese

For the Secret Sauce:

1/2 cup mayonnaise

2 tbsp ketchup

1 tbsp Dijon mustard

1 tbsp sweet pickle relish

1 tsp smoked paprika

Salt and pepper to taste

For Assembly:

4 slices of rye bread

2 tbsp butter (for grilling)

1 large onion, thinly sliced

1 tbsp olive oil

Instructions
 

Prepare the Secret Sauce: In a bowl, whisk together mayonnaise, ketchup, Dijon mustard, sweet pickle relish, smoked paprika, salt, and pepper until smooth. Adjust seasoning to taste. Set aside.

    Shape the Patties: In a large bowl, combine ground beef, garlic powder, onion powder, salt, and pepper. Mix gently, being careful not to overwork the meat. Form into 4 equal-sized patties, slightly larger than the bread slices as they will shrink while cooking.

      Caramelize the Onions: In a skillet, heat olive oil over medium heat. Add sliced onions and a pinch of salt. Sauté for about 15-20 minutes, stirring occasionally, until onions are golden and caramelized. Remove from the heat and set aside.

        Cook the Patties: In the same skillet (or a clean one), increase the heat to medium-high. Cook the beef patties for about 3-4 minutes on one side. Flip patties and place a slice of Swiss cheese on top. Cook for another 3-4 minutes until the cheese is melted and the patty reaches desired doneness.

          Assemble the Patty Melt: Spread a generous amount of secret sauce on one side of each slice of rye bread. On the un-sauced side of two slices, place a cooked patty (with cheese), top with caramelized onions, and then cover with the other sauced slice of bread.

            Grill the Patty Melt: In the same skillet, melt 1 tablespoon of butter over medium heat (add additional butter if necessary). Carefully place the assembled sandwiches in the skillet. Grill for 3-4 minutes on each side, pressing down gently with a spatula, until the bread is golden brown and crispy.

              Serve: Remove from the skillet, let cool for a minute, then cut in half and serve with extra secret sauce on the side for dipping!
