4 medium-sized Russet potatoes

1 cup shredded sharp cheddar cheese

1/2 cup grated Parmesan cheese

1/2 cup sour cream

4 tablespoons unsalted butter, melted

3 cloves garlic, minced

2 tablespoons fresh chives, finely chopped

Salt and pepper, to taste

Preheat the Oven: Preheat your oven to 425°F (220°C).

    Prepare the Potatoes: Wash the potatoes and dry them thoroughly. Using a sharp knife, make deep cuts along the length of each potato, about 1/4 inch apart, making sure not to cut all the way through. A good trick is to place the potato between two wooden spoons to avoid slicing completely.

      Garlic Butter Mixture: In a small bowl, combine the melted butter, minced garlic, salt, and pepper. Mix well.

        Brush and Bake: Place the potatoes on a baking sheet and brush the garlic butter mixture all over them, ensuring it seeps into the slices. Bake in the preheated oven for 40-45 minutes, or until the potatoes are tender and the edges start to crisp up.
