Ingredients
  

1 lb large shrimp, peeled and deveined

1 lb ribeye steak, boneless

2 tablespoons Cajun seasoning

2 tablespoons olive oil

3 cloves garlic, minced

1 bell pepper, diced (red or green)

1 small onion, diced

1 cup cherry tomatoes, halved

1 cup corn (fresh, frozen, or canned)

1 tablespoon lemon juice

Salt and pepper to taste

Fresh parsley, chopped (for garnish)

Instructions
 

Begin by marinating the steak: Rub the ribeye with 1 tablespoon of olive oil and half of the Cajun seasoning. Allow it to marinate for at least 30 minutes at room temperature.

    While the steak marinates, prepare the shrimp by tossing them in a bowl with the remaining Cajun seasoning, minced garlic, and a dash of salt and pepper. Set aside to marinate for about 15 minutes.

      Heat a large skillet or grill pan over medium-high heat and add 1 tablespoon of olive oil. Once hot, add the marinated steak and cook for about 4-5 minutes per side for medium-rare, or until desired doneness is achieved. Remove the steak from the skillet and let it rest.

        In the same skillet (no need to clean it), add the diced onion and bell pepper. Sauté for about 2-3 minutes until they begin to soften.

          Add the garlic and cook for an additional minute, stirring constantly to avoid burning.

            Toss in the shrimp, cherry tomatoes, and corn to the skillet. Stir everything together and cook for 3-4 minutes until the shrimp are pink and cooked through.

              Squeeze fresh lemon juice over the shrimp and stir to combine. Adjust seasoning with salt and pepper if needed.

                Slice the rested ribeye steak against the grain into thin strips. Serve alongside the Cajun shrimp mixture.
