12 oz cheese tortellini

2 tablespoons olive oil

3 cloves garlic, minced

1 can (14 oz) diced tomatoes, undrained

1 cup spinach, fresh and chopped

1 teaspoon dried Italian herbs (oregano, basil, thyme)

½ cup heavy cream

½ cup grated Parmesan cheese

Salt and pepper to taste

Fresh basil leaves for garnish

Instructions
 

Cook the Tortellini: Bring a large pot of salted water to a boil. Add the cheese tortellini and cook according to package instructions until al dente (usually about 3-5 minutes). Drain and set aside.

    Sauté the Aromatics: In a large skillet, heat the olive oil over medium heat. Add the minced garlic and sauté for about 30 seconds until fragrant, being careful not to burn it.

      Prepare the Sauce: To the skillet, add the undrained diced tomatoes and stir in the dried Italian herbs. Let this simmer for about 5 minutes, allowing the flavors to meld together.

        Add Spinach and Cream: Stir in the chopped spinach and heavy cream, cook for another 2-3 minutes until the spinach wilts, and the sauce slightly thickens.

          Combine with Tortellini: Gently fold in the cooked tortellini and half of the grated Parmesan cheese. Toss until the tortellini is well coated in the sauce. Season with salt and pepper to taste.

            Finish and Serve: Transfer the tortellini to serving bowls or a large platter. Sprinkle the remaining Parmesan cheese on top and garnish with fresh basil leaves.
