2 boneless, skinless chicken breasts

1 package (16 oz) potato gnocchi

2 cups baby spinach

1 cup cherry tomatoes, halved

1/2 cup heavy cream

1/2 cup chicken broth

2 cloves garlic, minced

1 teaspoon Italian seasoning

1 tablespoon olive oil

Salt and pepper to taste

Fresh basil leaves for garnish

Grated Parmesan cheese for serving

Prepare the Chicken: Season the chicken breasts with salt, pepper, and Italian seasoning on both sides. Heat olive oil in a large skillet over medium-high heat. Add the chicken and cook for about 6-7 minutes on each side, or until the chicken is cooked through and golden brown. Remove from the skillet and let it rest before slicing.

    Cook the Gnocchi: In the same skillet, add the gnocchi (without rinsing) and sauté for about 3 minutes until golden. This gives it a nice texture. You can add a splash of chicken broth if needed to deglaze the pan.

      Add Garlic and Tomatoes: Stir in the minced garlic and halved cherry tomatoes. Cook for 2-3 minutes until the tomatoes start to soften.

        Make the Sauce: Pour in the chicken broth and heavy cream, stirring well. Cook for another 3-4 minutes until the sauce is slightly thickened.

          Incorporate Spinach: Add the baby spinach to the skillet and stir until wilted. Return the sliced chicken to the pan, mixing everything together until well combined. Adjust seasoning with more salt and pepper if needed.
