Ingredients
  

2 cups cooked turkey, shredded

1 cup frozen mixed vegetables (peas, carrots, corn, green beans)

1 small onion, diced

2 cloves garlic, minced

1/3 cup all-purpose flour

2 cups chicken broth

1 cup milk

1 teaspoon dried thyme

1 teaspoon dried rosemary

1 teaspoon salt

1/2 teaspoon black pepper

2 tablespoons olive oil

1 tablespoon butter

1 package (2 crusts) refrigerated pie crusts

Instructions
 

Preheat your oven to 425°F (220°C).

    In a large skillet, heat the olive oil and butter over medium heat. Add the diced onion and sauté until translucent, about 3-4 minutes. Stir in the minced garlic and cook for an additional minute until fragrant.

      Sprinkle the flour over the onion and garlic mixture, and stir for about 1 minute to create a roux.

        Slowly add the chicken broth while whisking continuously to prevent lumps. Cook for about 5 minutes until the sauce thickens.

          Stir in the milk, mixed vegetables, shredded turkey, thyme, rosemary, salt, and black pepper. Cook for another 2-3 minutes, allowing flavors to meld. Remove from heat.

            Roll out one pie crust and place it in a 9-inch pie dish. Pour the turkey filling into the crust.

              Carefully cover the filling with the second pie crust. Seal the edges by crimping them with a fork or by pinching them together. Cut a few slits in the top crust to allow steam to escape.

                Bake in the preheated oven for 30-35 minutes or until the crust is golden brown and the filling is bubbling.

                  Allow the pot pie to cool for about 10 minutes before serving, to let the filling set slightly.
