1 ½ cups graham cracker crumbs

½ cup unsalted butter, melted

2 cups cream cheese, softened

1 cup granulated sugar

¾ cup sour cream

1 teaspoon vanilla extract

1 teaspoon lime juice

1 cup fresh mango puree (from about 2 ripe mangoes)

3 large eggs

Fresh mango slices and mint leaves for garnish

Prepare the Crust: Preheat your oven to 325°F (160°C). In a mixing bowl, combine the graham cracker crumbs and melted butter until the mixture resembles wet sand. Press this mixture evenly into the bottom of a 9-inch springform pan. Bake for 10 minutes, then remove and set aside to cool.

    Make the Filling: In a large bowl, beat the softened cream cheese and sugar together using an electric mixer until smooth and creamy. Add the sour cream, vanilla extract, lime juice, and mango puree; mix until fully incorporated.

      Add Eggs: Beat in the eggs one at a time, mixing just until blended after each addition. Be careful not to overmix the batter.

        Pour and Bake: Pour the cheesecake filling over the prepared crust in the springform pan. Smooth the top with a spatula. Bake in the preheated oven for 55-65 minutes, or until the edges are set and the center has a slight jiggle.

          Cool and Chill: Once baked, turn off the oven and leave the cheesecake inside for an additional hour (this helps prevent cracks). Remove from the oven and cool completely at room temperature. Once cooled, refrigerate for at least 4 hours, preferably overnight.

            Serve: Carefully remove the sides of the springform pan. Slice the cheesecake and serve chilled, garnished with fresh mango slices and mint leaves on top.
