Ingredients
  

4 (6 oz.) grouper fillets

1 tablespoon olive oil

Salt and black pepper to taste

1 can (14 oz.) coconut milk

1 tablespoon fresh ginger, grated

2 cloves garlic, minced

1 tablespoon red curry paste (adjust based on spice preference)

1 tablespoon fish sauce

2 tablespoons lime juice (about 1 lime)

1 tablespoon brown sugar

1 tablespoon fresh cilantro, chopped (for garnish)

Sliced red chili (for garnish, optional)

Lime wedges (for serving)

Instructions
 

Prepare the Grouper:

    - Rinse the grouper fillets under cold water and pat them dry with paper towels.

      - Rub the fillets with olive oil, then season both sides with salt and black pepper. Set aside.

        Make the Spicy Coconut-Ginger Sauce:

          - In a medium saucepan over medium heat, add the coconut milk, grated ginger, minced garlic, and red curry paste.

            - Stir the mixture well and let it simmer for about 5-7 minutes until slightly thickened.

              - Add in the fish sauce, lime juice, and brown sugar. Stir until the sugar has dissolved completely. Taste and adjust seasoning if necessary, adding more lime juice or curry paste according to your preference.

                Cook the Grouper:

                  - In a large skillet over medium-high heat, add a drizzle of olive oil.

                    - Once the oil is hot, place the seasoned grouper fillets in the skillet. Cook for about 4-5 minutes on one side until golden brown, then carefully flip and cook for an additional 4-5 minutes, or until the fish is cooked through and flakes easily with a fork.

                      Serve:

                        - Place each grouper fillet on a plate and generously spoon the spicy coconut-ginger sauce over the top.

                          - Garnish with chopped cilantro and sliced red chili, if you like it spicy.

                            - Serve with lime wedges on the side for extra zing.
