Ingredients

2 cups mashed potatoes (leftover or freshly made)

1 cup all-purpose flour, plus extra for dusting

1 teaspoon baking powder

1/2 teaspoon salt

2 tablespoons butter, softened

1/2 teaspoon ground black pepper (optional)

Vegetable oil or additional butter for frying

Instructions

Prepare the Mashed Potatoes: If using fresh potatoes, peel and cut them into chunks. Boil them in salted water until tender, about 15-20 minutes. Drain and mash until smooth. Let cool slightly.

Mix the Dough: In a large mixing bowl, combine the mashed potatoes, all-purpose flour, baking powder, salt, and ground black pepper (if using). Mix until all ingredients are incorporated and a soft dough forms.

Knead and Roll: Turn the dough onto a floured surface. Knead lightly for a minute or two until the dough is cohesive but still soft. Roll it out into a circle about 1/2-inch thick. Cut the circle into quarters, creating four wedges.

Cook the Farls: Heat a skillet over medium heat and add a small amount of vegetable oil or butter. Fry the potato farls for about 4-5 minutes on each side, or until golden brown and crisp.

Serve Warm: Remove the farls from the skillet, and drain on paper towels if necessary. They are best served warm, either as a side to a full Irish breakfast or with butter and jam.

Prep Time, Total Time, Servings: 10 minutes | 30 minutes | 4 servings.

              - Presentation Tips: Serve the farls on a rustic wooden board or plate. For a delightful touch, stack them in a small, inviting pile and offer a pat of butter on the side for spreading.
