300g pasta (fusilli or penne recommended)

2 tablespoons olive oil

400g Italian sausage (mild or spicy, casings removed)

3 cloves garlic, minced

1 can (400g) diced tomatoes

150g fresh spinach, roughly chopped

1 teaspoon dried oregano

1/2 teaspoon red pepper flakes (optional)

Salt and pepper to taste

50g grated Parmesan cheese (plus extra for serving)

Fresh basil leaves for garnish

Instructions
 

Cook the Pasta: In a large pot of salted boiling water, cook the pasta according to package instructions until al dente. Drain and reserve about 1/2 cup of the pasta water.

    Cook the Sausage: In a large skillet, heat the olive oil over medium heat. Add the Italian sausage to the skillet. Use a wooden spoon to break it up into smaller pieces as it cooks. Sauté for about 5-7 minutes until browned and cooked through.

      Add Garlic and Tomatoes: Stir in the minced garlic and cook for an additional 1-2 minutes until fragrant. Then, add the can of diced tomatoes (with their juice) to the skillet. Mix well and bring to a gentle simmer.

        Incorporate Spinach and Seasonings: Add the chopped spinach to the skillet. Stir in the dried oregano, red pepper flakes (if using), and season with salt and pepper to taste. Cook for 3-4 minutes, allowing the spinach to wilt and flavors to meld together.

          Combine Pasta: Add the cooked pasta to the skillet, tossing everything together gently. If the mixture seems too dry, pour in a little of the reserved pasta water until you reach your desired consistency.

            Add Cheese: Remove from heat and stir in the grated Parmesan cheese until well combined.
