8 oz (225g) pasta (penne or fusilli works best)

1 cup cottage cheese

2 cups ripe cherry tomatoes, halved

2 cloves garlic, minced

1 tablespoon olive oil

1 teaspoon dried oregano

1 teaspoon fresh basil, chopped (plus extra for garnish)

¼ teaspoon red pepper flakes (optional)

Salt and pepper to taste

Freshly grated Parmesan cheese (for serving)

Instructions
 

Cook the pasta: In a large pot of boiling salted water, cook the pasta according to package instructions until al dente. Reserve ½ cup of pasta water, then drain the pasta and set aside.

    Sauté the tomatoes: In the same pot, heat olive oil over medium heat. Add minced garlic and sauté for about 1 minute until fragrant. Then, add the cherry tomatoes and cook for 4-5 minutes, stirring occasionally, until they begin to soften and burst.

      Combine ingredients: Lower the heat and stir in the cottage cheese, dried oregano, and fresh basil. Mix well to create a creamy sauce. Gradually add a bit of the reserved pasta water to achieve your desired sauce consistency.

        Mix the pasta: Add the cooked pasta to the sauce mixture. Toss everything together until the pasta is well coated. Season with salt, pepper, and red pepper flakes if desired.
