12 oz spaghetti or fettuccine

2 tablespoons olive oil

1 medium onion, diced

3 cloves garlic, minced

1 lb Italian sausage (mild or spicy, casings removed)

1 can (14 oz) diced tomatoes (preferably San Marzano)

1 cup chicken or vegetable broth

1 teaspoon dried oregano

1 teaspoon red pepper flakes (adjust for spice preference)

1 cup fresh basil leaves, chopped

Salt and pepper to taste

Grated Parmesan cheese for serving

Cook the Pasta: Bring a large pot of salted water to a boil. Add spaghetti or fettuccine and cook according to package instructions until al dente. Reserve 1 cup of pasta water, then drain and set aside.

    Prepare the Sausage: In a large skillet over medium heat, heat the olive oil. Add the diced onion and sauté until translucent, about 3-5 minutes. Stir in the minced garlic and cook for an additional 1 minute.

      Add the Italian Sausage: Crumble the Italian sausage into the skillet and cook, stirring occasionally, until browned and cooked through, about 7-10 minutes. Drain excess fat if necessary.

        Combine with Tomatoes: Pour in the canned diced tomatoes (with juices), chicken or vegetable broth, oregano, and red pepper flakes. Stir well to combine and bring to a simmer. Let it cook for about 10-15 minutes, allowing the sauce to thicken slightly.

          Mix in the Pasta: Add the cooked pasta to the skillet, tossing to coat it with the sauce. If the sauce is too thick, add reserved pasta water a little at a time until you reach the desired consistency.

            Add Fresh Basil: Stir in the chopped fresh basil and season with salt and pepper to taste. Remove from heat.
