1 pound bacon, chopped

2 cups ripe tomatoes, chopped (about 4-5 medium tomatoes)

1 medium onion, finely diced

4 cloves garlic, minced

1/2 cup brown sugar

1/4 cup apple cider vinegar

1 teaspoon smoked paprika

1/2 teaspoon black pepper

1/4 teaspoon red pepper flakes (optional, for heat)

Instructions
 

In a large skillet over medium heat, cook the chopped bacon until it turns crispy. Use a slotted spoon to transfer the cooked bacon to a paper towel-lined plate, leaving the rendered bacon fat in the skillet.

    In the same skillet, add the finely diced onion and cook in the bacon fat until softened, about 5 minutes.

      Stir in the minced garlic and cook for an additional 1-2 minutes until fragrant.

        Add the chopped tomatoes, brown sugar, apple cider vinegar, smoked paprika, black pepper, and red pepper flakes to the skillet. Stir to combine.

          Bring the mixture to a boil, then reduce heat to low. Let it simmer uncovered for about 25-30 minutes, stirring occasionally. The mixture should thicken and become jam-like.

            Once thickened, stir in the crispy bacon and adjust the seasoning with salt to taste.

              Remove from heat and let the jam cool slightly before transferring it to a clean jar or airtight container.
