2 tablespoons chopped fresh dill (or 1 tsp dried dill)

1 tablespoon lemon juice

Salt and pepper to taste

4 slices whole grain bread

Lettuce leaves (for garnish)

Optional: Sliced tomatoes and cucumber for extra crunch

Instructions
 

In a mixing bowl, combine the crumbled tofu, vegan mayonnaise, and Dijon mustard, mixing well to create a creamy base.

    Add the finely chopped celery, grated carrot, and red onion to the bowl. Stir until all vegetables are evenly distributed.
