Toasted Ham & Cheese Tortilla Pockets

4 large flour tortillas

8 slices of deli ham

1 cup shredded cheddar cheese (or cheese of your choice)

1 cup shredded mozzarella cheese

1 tablespoon Dijon mustard (optional)

1 tablespoon butter (for crisping)

Salt and pepper to taste

Fresh parsley or chives for garnish (optional)

Instructions
 

Prepare the Filling: In a mixing bowl, combine the shredded cheddar and mozzarella cheeses. If you like a little zing, mix in Dijon mustard with the cheese.

    Layer the Ingredients: Place a tortilla on a clean surface. On one half of the tortilla, layer 2 slices of ham followed by a generous portion of the cheese mixture. Sprinkle with salt and pepper to taste.

      Fold the Tortilla: Carefully fold the tortilla in half over the filling, pressing down gently to close it.

        Heat the Pan: Preheat a non-stick skillet over medium heat. Add a little butter and let it melt, ensuring the pan is coated evenly.

          Toast the Pockets: Place the folded tortilla in the skillet. Cook for about 3-4 minutes on one side, or until golden brown and the cheese starts to melt. Flip it over and cook for another 2-3 minutes on the other side.

            Repeat: Repeat the process for the remaining tortillas, adding more butter to the pan as needed.

              Serve: Once toasted to perfection, remove the pockets from the skillet and let them cool for a minute. Slice them in half if desired. Garnish with fresh parsley or chives for an extra touch.
