4 slices of rustic bread (such as sourdough or whole grain)

2 ripe nectarines, pitted and cut into wedges

2 tablespoons olive oil

1 tablespoon honey

1 teaspoon fresh thyme leaves (or ½ teaspoon dried thyme)

½ teaspoon cinnamon

¼ cup crumbled goat cheese (or feta cheese)

Fresh mint leaves for garnish

Salt and pepper to taste

Instructions
 

Preheat the Grill: Preheat your grill or grill pan over medium-high heat. If using a grill pan, you can brush it lightly with olive oil to prevent sticking.

    Prepare Nectarines: In a bowl, toss the nectarine wedges with 1 tablespoon of olive oil, honey, thyme, cinnamon, salt, and pepper until well coated.

      Grill Nectarines: Place the nectarines on the grill and cook for about 3-4 minutes on each side, or until they have nice grill marks and are tender but not mushy. Remove them from the grill and set aside.
