1 cup strong brewed coffee, cooled

1 tablespoon cocoa powder

3 large eggs, separated

1/2 cup granulated sugar

1 cup mascarpone cheese

1 cup heavy whipping cream

1 teaspoon vanilla extract

24 ladyfinger cookies (savoiardi)

Dark chocolate shavings (for garnish)

Prepare the Coffee Mixture: In a shallow dish, mix the cooled coffee with 1 tablespoon of cocoa powder. Set aside.

    Make the Cream Mixture: In a mixing bowl, whisk the egg yolks and granulated sugar together until pale and creamy (about 3-4 minutes). Add the mascarpone cheese and vanilla extract, mixing until smooth.

      Whip the Egg Whites: In a separate bowl, whisk the egg whites until soft peaks form. Gently fold the whipped egg whites into the mascarpone mixture to lighten it.

        Whip the Cream: In another bowl, whip the heavy cream until stiff peaks form. Carefully fold the whipped cream into the mascarpone mixture until fully combined.

          Assemble the Tiramisu: Dip each ladyfinger into the coffee mixture briefly (don't soak) and place them in a single layer at the bottom of a serving dish. Spread half of the mascarpone cream mixture over the ladyfingers. Repeat with another layer of coffee-dipped ladyfingers and top with the remaining mascarpone cream.

            Chill: Cover the dish with plastic wrap and refrigerate for at least 4 hours, preferably overnight for best flavor and texture.

              Serve: Before serving, dust the top with additional cocoa powder and garnish with dark chocolate shavings.
