1.5 lbs beef chuck, cut into 1-inch cubes

2 tablespoons vegetable oil

1 large onion, diced

2 cloves garlic, minced

2 bell peppers (red and yellow), chopped

2 medium carrots, sliced

2 cups chopped fresh tomatoes or 1 can (14 oz) diced tomatoes

1 tablespoon tomato paste

1 teaspoon smoked paprika

1 teaspoon dried marjoram

1 teaspoon caraway seeds

4 cups beef broth

Salt and pepper to taste

Fresh parsley, chopped (for garnish)

1 cup sour cream (for serving)

Instructions
 

In a large Dutch oven or heavy pot, heat the vegetable oil over medium-high heat.

    Add the beef cubes and brown them on all sides, about 5-7 minutes. Remove the beef from the pot and set it aside.

      In the same pot, add the diced onion and sauté for about 3-4 minutes, until translucent.

        Stir in the minced garlic, cooking for an additional minute until fragrant.

          Add the chopped bell peppers and sliced carrots to the pot, and cook for another 5 minutes, stirring occasionally.

            Return the browned beef to the pot, then mix in the chopped tomatoes, tomato paste, smoked paprika, marjoram, and caraway seeds.

              Pour in the beef broth, ensuring all ingredients are covered. Mix well and season with salt and pepper to taste.

                Bring the mixture to a boil, then reduce the heat to low, cover, and let it simmer for about 1.5 to 2 hours until the beef is tender. Stir occasionally.

                  Once the goulash is done, taste and adjust seasoning if necessary.

                    Serve hot, garnished with chopped fresh parsley and a dollop of sour cream on top.
